can a manager clock you off the clock while you are working with out you knowing about it.

I think it depends on the circumstances. For example, if the employees have been told that they have to take a lunch break in order that no one will get into overtime, then I think they can clock you out for the amount of time you should be out for lunch. If you've not been given any rules about mandatory breaks, then I don't think they can. More information is needed to properly answer this question.
