What other equipment is necessary to accompany a fryer in a restaurant?

This kind of open question is really hard to answer. I've started two restaurants that had no fryers at all!

The fryer will be the central part of my operation, and I was curious what equipment (filters and traps, hoods, etc) are absolutely necessary and what is recommended beyond bare essentials.

Hoods, filters, air circulation equipment, etc. are covered by your local Health Dept. Most will certainly require a fire suppression hood at a minimum. They will have the specs.

You will also need to look at plumbing. With fryers on site, you will almost certainly have to have grease traps installed. If not already placed, these can be a substantial investment. (think a double sized septic tank.)

Again, your local health department is the place to start.
